The fish, the most common dish and ingredient in many Lanzarote dishes, cooked in all the Islands in every conceivable way: fried, broiled, baked, sautéed, etc.. It is not unusual to serve it with the traditional red mojo sauce, mojo picon (spicy) or green mojo (softer).

Besides fish, seafood is also a very common dish in many parts of the Canary Island of Lanzarote. One of the most important dishes, traditional from the island of Lanzarote is "Sancocho", a fish stew. Another important dish is the gofio, which it has been served in Lanzarote and the Canary Islands for centuries, since it is a legacy of the ancient inhabitants of the Canaries, is created with roasted corn flour, wheat and corn. It can be had with fish broth or milk.

Lanzarote cheese is made with one hundred percent from raw goat's milk. Using a clotting enzyme it maintaines vitamins in the cheese. The resulting mixture of this process is pressed but not cooked, which helps to preserve their original excellent properties. The crust color is white, like the mass when cut. Its outer bark is thin and is highlighted by the traditional pattern of braided palm. Mild-tasting and palatable, with a delicate aroma. Ripened cheeses acquire externally white shades of ivory to dark brown. As more audacious bid, the cheeses are naturally smoked, or the original cheese covered with a layer of gofio or paprika.

Products made from canarian goat's milk without any additives. Cylindrical shape and pearly white. Aroma of fresh goat milk and cheese characteristic flavor, lactic and soft. The paste is a compact mass at cutting and grainy texture. It has a virtually nonexistent white crust.

 

Soft Cheese: Products made from added goat's milk at a suitable temperature. Its color is white with a slight ivory tone.

Semicured Cheese: It is made of Canarian goat milk which is added, at a suitable temperature. Slightly ivory tone and creamy flavor, lactic and slightly pungent, with soft shades of goat's milk. This type of cheese is also presented in other varieties: Semicured smeared with paprika, and semicured topped with gofio. It features a compact mass paste cut and a creamy texture. The outside has yellowish-brown color. In gofio or pepper varieties, the crust is the characteristic of these products.

 

Cured Cheese from Lanzarote: Made from canarian goat's milk, milk enzymes and salt, it also presents a variety of hard cheese rubbed with paprika and cheese spread with gofio. Yellow ivory and rich flavor, creamy and slightly spicy. Its compact body has a cut and creamy texture. It has a yellowish-brown color.
